CHAYOTE FEATURES
The Chayote, Sechio or spiny eggplant, is the fruit of a vegetable belonging to the family of cucurbits. The fruit of the Chayote has uniform spines that are brushed before it is put on the market. As big as a fist, it is green and wrinkled and eaten cooked like a courgette, to which it resembles in texture and taste.
CHAYOTE ORIGIN
Originally from South America and widely used by the Aztec civilization, the Chayote prefers temperate climates; thanks to this it grows easily even in the Mediterranean area where there are small cultivars in Spain, Greece and Southern Italy.
