VITELOTTE FEATURES
Vitelotte are a variety of the classic tuber which, however, has the peel and pulp of an intense purple color given by the high presence of antioxidants and anthocyanins, natural pigments that color potatoes of this color. The consistency of the purple potato is dry and floury and lends itself very well to purees and dumplings.

VITELOTTE ORIGIN
Vitelotte are a type of tuber originally from Peru and spread in very few other parts of the world. In Europe there are only a few cultivars in France that supply the increasingly constant demand for this product from top-level kitchens.
