Parsnip is a native European plant cultivated in our soils since time immemorial and was widely used by all European civilizations until the fifteenth century, during which, thanks to the success of importing the potato from the Americas, it fell inexorably into decline and only reappeared. a few decades ago thanks to the rediscovery of forgotten foods and flavors.
