SWEET POTATOES FEATURES
The thin skin of the sweet potato is edible; it can be smooth or rough in structure and in the range of colors it goes from white to yellow, to orange, to red, or to purple; the pulp can be white, yellow or orange. The red-paste variety contains a greater quantity of sugars and is preferred for the preparation of desserts. The aerial part of the plant consists of long stems that can reach 5 meters in length and produce leaves that are used like spinach. The over 400 varieties of sweet potato are grouped into two main categories. In the first group, the pulp is firm and dry and once cooked it becomes almost floury while the pulp of the second variety becomes soft and moist after cooking.

SWEET POTATOES ORIGIN
Tuber of a plant native to Central America. Despite its name, the sweet potato is not related to the potato. Rather, it belongs to the family of convolvulaceae plants, which produce very beautiful bell-shaped flowers.
