PITHAYA FEATURES
25 species of Pithaya are known, but can be divided mainly into two groups: the red pithaya and the yellow pithaya. Yellow Pithaya has a white flesh with small black seeds. The red one can be both white and red on the inside and is less tasty than the yellow one. In both varieties the pulp is translucent and dense with edible seeds. The red variant is also called the dragon fruit due to its particular shape that resembles the head of a dragon.

PITHAYA ORIGIN
The pithaya is native to the south of Peru. Countries like Colombia and Ecuador and some countries in the Asian continent (Vietnam) and Israel are propagating the cultivation of this fruit. The name “Pithaya” comes from the Haitian dialect and means “thorny fruit”.
