COMBAVA FEATURES
The Combava (or Kaffir Lime) is a citrus fruit not very widespread and famous, as well as for its pockmarked skin, also for its extreme acidity which limits its use only and exclusively in recipes where it is desired to enhance the acidic note of this fruit in contrast to sweet ingredients, as typically happens in the bittersweet kitchens of Southeast Asia.
COMBAVA ORIGIN
Combava has an uncertain origin. There are those who hypothesize to be a hybrid of cedar and lime and those who theorize is a spontaneous mutation of the latter. It is widely cultivated only in Southeast Asia and in some islands of the Indian Ocean.
